Monkfish is the chef's fish — and for good reason. Meaty, firm and virtually boneless, it holds its own against bold flavours that would overwhelm a more delicate fillet. Roast it, grill it, wrap it in bacon, throw it on a skewer. It takes everything you give it and asks for more.
Ours comes in fresh daily, trimmed and skinned by hand in our Belfast facility. At a minimum 400g per portion this is a serious piece of fish — the kind of centrepiece that makes a dinner feel like a proper occasion.

- Weight: Minimum 400g per portion
- Origin: North Atlantic, fresh daily
- Preparation: Trimmed and skinned monkfish tail, ready to cook
- Allergens: Fish (monkfish). Produced in a facility handling other fish and shellfish.
- Storage: Keep refrigerated 0–4°C. Consume within 2 days of delivery or freeze on day of receipt.
- Cooking: Season well and sear in a very hot pan with oil for 2 minutes each side until golden. Transfer to an oven at 200°C for 8–10 minutes depending on thickness. Rest for 2 minutes before slicing. Pairs beautifully with chorizo, black pudding, or a classic thermidor sauce.
