Mount's Bay off the Cornish coast is one of the finest sardine fishing grounds in Britain — and these are the sardines that prove it. Caught young, packed whole in sunflower oil with the skin and bones intact, they have a richness and depth that the standard supermarket tin simply can't touch. The bones are soft and entirely edible — in fact they're where much of the flavour and nutrition lives.
Sardines done properly are one of the great simple pleasures of a good larder. Eaten straight from the tin on thick buttered toast with a squeeze of lemon, laid on a board with pickles and sourdough, or mashed with butter and spread generously on crackers. The kind of tin that serious food lovers always have to hand.
