Escabeche is one of the oldest and most celebrated ways to prepare fish — a Spanish and Portuguese tradition of marinating in vinegar, paprika and spice that transforms already exceptional sardines into something truly special. Rockfish take their sustainably caught Mount's Bay sardines and finish them in a classic escabeche of vinegar, DOP paprika and salt. The result is complex, aromatic and deeply savoury with a gentle acidity that cuts through the richness of the fish beautifully.
This is the tin for the adventurous. Serve at room temperature straight from the tin with good bread to mop up the sauce, layer onto a charcuterie board alongside cured meats and pickles, or eat them the traditional Iberian way — straight from the tin with a cold glass of white wine and nothing else. Quite possibly the most interesting tin in the range.
