Sashimi grade yellowfin tuna is the benchmark by which all other tuna is measured. Deep crimson, clean and with a firm, buttery texture that melts on the tongue — this is the tuna that sushi restaurants pay a premium for and serious home cooks seek out. Saku blocks are trimmed, portioned loins ready to slice straight into perfect sashimi, sear rare for a tuna tataki or cut into cubes for a poke bowl.
Frozen at the peak of freshness to lock in both quality and colour, these blocks defrost beautifully and deliver a result that rivals anything you'd find in a high end Japanese restaurant. At a minimum 500g per pack there's enough here for a seriously impressive spread.

- Preparation: Trimmed saku blocks, skin and bloodline removed, ready to slice or sear
- Allergens: Fish (tuna). Produced in a facility handling other fish and shellfish.
- Storage: Keep frozen. Defrost slowly in the fridge overnight for best results. Once defrosted consume within 24 hours. Do not refreeze once thawed.
- Cooking: For sashimi slice against the grain into 5–7mm pieces and serve immediately with soy, wasabi and pickled ginger. For tataki sear in a smoking hot dry pan for 20–30 seconds each side, slice thin and serve with ponzu and sesame. For poke cut into 2cm cubes and marinate in soy, sesame oil, rice vinegar and chilli.
